Ingredients:
1 package of Scott Farms Tortilla Soup Mix
4 cups (2 quarts) of chicken broth
2 cups of cooked, shredded chicken
1 (14.5 oz) can of diced tomatoes, undrained
1 (15 oz) can of black beans, drained and rinsed
1 (15 oz) can of corn, drained
1 cup of shredded cheese (cheddar or Mexican blend)
Tortilla strips or crushed tortilla chips
Optional garnishes: diced avocado, sour cream, chopped cilantro, lime wedges
Instructions:
1. In a large pot, bring the chicken broth to a boil.
2. Stir in the Scott Farms Tortilla Soup Mix and let it simmer for 5 minutes.
3. Add the cooked, shredded chicken, diced tomatoes, black beans, and corn to the pot. Stir well.
