Ingredients:
400g spaghetti or your choice of pasta
1 cup cannellini beans, cooked and drained
3 tablespoons Pepper Creek Farm’s Italian Pesto Dipping Blend
2 tablespoons olive oil
Salt, to taste
Fresh basil leaves for garnish
Instructions:
1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and reserve some of the pasta water.
2. While the pasta is cooking, in a small bowl, mix the Italian pesto dipping blend with olive oil to create a paste. You can adjust the consistency by adding more olive oil or some pasta water to make it smoother.
3. In the same pot used for the pasta, over low heat, combine the cooked pasta and the cannellini beans.
4. Add the pesto blend paste to the pot and toss everything together until the pasta and beans are well-coated. If the mixture seems dry, add a little pasta water to help spread the sauce.
5. Taste and adjust the seasoning, adding a pinch of salt if needed.
6. Serve the pasta hot, garnished with fresh basil leaves.
