Chef Andrew Black’s Perle Mesta Pop-Up is introducing Mango Bourbon Pork Ribs made with slow-smoked baby back ribs and mango barbecue sauce. Champions BBQ is serving a Sweet Heat Brisket Biscuit with smoked brisket, bacon jam, cowboy candy, sweet chili aioli, and hot honey.
Other new additions include Birria Ramen from Bad Boys BBQ, a Suya Lamb Kebab from Afrikan Delights, and a Korean BBQ Beef Skewer from 1907. Together, they show how much the Oklahoma State Fair food lineup has expanded beyond traditional midway fare.
Korean Corn Dogs Get Even More Creative
Chan’s Eatery already serves Korean corn dogs in several versions, including traditional, potato, Hot Cheeto, and Fruity Pebbles. For 2026, the vendor is adding a Buldak Carbonara Ramen Korean Corndog made with half mozzarella and half hot dog, coated in crispy ramen noodles and finished with a creamy spicy sauce.
Another new option, the Churro Korean Corndog, uses mozzarella, Cinnamon Toast Crunch, cinnamon sugar, and sweetened condensed milk.
Deep-Fried Favorites Are Still Everywhere
Deep-fried food remains a major part of the Fair, with options ranging from Oreos and cheesecake to pickles and Twinkies. One of the new additions for 2026 is Deep-Fried Ranch, which wraps a ranch-flavored filling in dough, coats it in panko breading, fries it, and finishes it with Nashville hot oil and ranch seasoning.
Cookie Dough Monsters is also introducing a Cookie Dough Eggroll made with edible chocolate chip cookie dough inside a fried egg roll wrapper, topped with powdered sugar and chocolate drizzle.
Cool Down With Something Different 
Fresh-squeezed lemonade and root beer remain easy choices, but the 2026 drink menu includes several more adventurous options. Strawberry Crunch Horchata combines horchata with strawberries, strawberry cream, and a crunchy rim. Chan’s Eatery is serving a Mango Sticky Rice Refresher made with coconut milk and mango, while Travelin’ Tom’s Coffee Truck has a Brown Butter Buzz cold brew topped with maple cold foam.
There is also Pickle Dr Pepper from The Bacon Habit for anyone curious enough to try one of this year’s more unusual drinks.
Go on Taste of the Fair Tuesday
Visitors who want to sample more without ordering full-size portions may want to visit on Tuesday, September 22. Taste of the Fair Tuesday includes $4 outside gate admission and participating $4 food items from vendors throughout the grounds.
